1084 Blanc de blancs

Our “1084 – Blanc de Blancs” is created using the Solera process: its vinification is obtained by only using “free-run must” from Chardonnay grapes.

Production

The fermentation occurs in oak barrels. The wine remains here for the following refinement too: during this process indigenous yeasts, which are suspended by weekly batonnage, help harmonise the natural oxidation.

The bottling process is carried out at the next Easter, the ageing on the lees goes on for at least 18 months at a natural and constant temperature. During this phase we carry out a process that consists in disassembling the stack of bottles and reassembling it, facilitating the development of evolving organoleptic characteristics.

Characteristics

The “Blanc de Blancs” is recognisable because of its bright golden colour and fine, thin perlage. It reveals very complex hints of ripe fruit, honey, custard and dried fruit with a woody nuance. In the mouth, it is structured and elegant, soft and creamy, with a powerful acidity and beautiful mineral texture.
